This is an organic vegetarian (vegan) cooking demonstration. The macrobiotic brown rice salad is vegan, gluten free, yeast free and sugar free. It is a classic macrobiotic dish that is incredibly nourishing but at the same time appealing to the average person who wants a good feed. The dish is very simple to prepare. Sun will discuss the nutritional benefits of the individual ingredients and the role of organic food in a sustainable future.

Sun has worked in a range of hospitality environments for 18 years. His diverse roles include service, cooking, menu development, training and management. He is passionate about efficient, sustainable business practices and genuine, nourishing food, healing foods and plant-based diets, and has taught medical students at Monash University.
