The venue offers sustainable event options, including opportunities for slow food or organic menus, and the profits from events contribute to the continual refurbishment of the convent buildings. Caroline Higgins Caroline has been a celebrant, with a keen interest in sustainability. She has acted as a celebrant for many couples who have incorporated sustainability into their ceremonies. Fay Loveland Fay is an environmental educator currently on maternity leave from the Melbourne Metropolitan Waste Management Group, and will talk about her experience of her own green wedding.
